A Recipe - Chocolate Cherry Cake

A fast, easy, moist, chocolate, and absolutely delicious cake.  


Cake:

1 box chocolate cake mix
1 can cherry pie filling
2 eggs
1t. almond extract

Mix all ingredients together with a wooden spoon(not a mixer--it will mush the cherries). Pour into a greased 9x13pan. Bake at time and temp for this size pan on cake mix box.


Icing:

1c. sugar
1/3c. milk
5T butter

Mix in a saucepan and boil for one minute. Remove from heat and add 6oz semi-sweet choc chips. Stir until melted. Let cool a bit and beat until thickens. Pour warm onto cake.

A Recipe - Cinnamon Rolls

CinnamonRolls

Rolls:
1c. milk
1/4c. milk
1 stick butter
1/2c. sugar
4c. flour
1 pkg.(2 1/4t) yeast
1/2t salt
1 egg

Scald milk and water. Add butter and sugar. Cool to 100*. Mix 2 c. flour and yeast. Add this to warm mixture. Beat 2 minutes. Add salt and egg. Beat 1 minute. Add 2c. flour and beat well with spoon. Refrigerate overnight(or 4 hours) covered. Roll out. Dot with butter. Sprinkle with cinnamon and sugar. Roll up. Slice into a dozen rolls and place into greased 9x13 pan. Cover and let rise one hour. Bake at 375* for 20-25 minutes until golden.

Frosting:
2c. conf. sugar
1/4c. soft butter
1/4t salt
1t vanilla
3-4T milk

Cream the sugar and butter. Add the remaining ingredients and beat until smooth.

Yield: 1 dozen rolls

Note: It is easiest to slice the rolls with dental floss. Take a piece of floss, slide it under the roll to where you want to slice it. Then bring the ends up over the top and cross pulling tight until the floss cuts the dough completely.
I also add maple syrup to the frosting. Sometimes I'll drizzle maple syrup on the rolls before I frost them. 


So this recipe I typed up weeks ago, but finally decided to share it. ;) It is my grandma's recipe and it is amazing. I have plans to make a pumpkin ring cake with eggnog icing sometime this weekend...anyone say yum!?! That is after the grocery trip is made to get the whipping cream and other important ingredients. =D

I'm off to a dance meeting...The studio I have gone to for nine years is closing this year due to the flood damage. The teachers are having a meeting to see if we can find anywhere else to have classes--they still want to teach and we(the students) still want to dance! I'm praying that they will find someplace--I don't know of any other studio in my area that has the same quality instruction.

A Recipe - Georgia Pecan Cake

This is the most delicious cake I've had in a long time. It is like a regular pound cake with a hint of lemon and pecans sprinkled throughout--absolutely delicious! Especially if you love pound cake, lemon, and pecans. =D

Georgia Pecan Cake

1 c. butter, softened
2 c. sugar
4 eggs
1 t. vanilla extract
½ t. lemon extract
3 c. flour
¾ t. salt
½ t. b.powder
½ t. b.soda
1 c. buttermilk
1 c. chopped pecans

1.) In a large mixing bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in extracts.
2.) Combine the flour, salt, baking powder and baking soda; set ¼ c. aside. Add the remaining flour mixture to the creamed mixture alternately with buttermilk. Toss pecans with the reserved flour mixture; fold into batter.
3.) Pour into a greased and floured 10-in tube pan. Bake at 325* for 60-70 min or until a toothpick inserted near the center comes out clean.
4.) Cool for 10min before removing from pan to a wire rack to cool completely.

The Ottomans were the first to use ultra heavy guns. One super cannon was 27 feet long. Its barrel was almost 3 feet in diameter with sides 8 inches thick. It could shoot a 1300 pound ball.
That is one massive cannon--I think I'd like to stay on their good side, wow.

Oh, are the dates for my posts showing up for you? Cause they aren't working on my end and I have no idea why.

A Recipe - Peanut Butter Sandwich Cookies


Peanut Butter Sandwich Cookies
Ingredients:
1 c. butter
1 c. creamy peanut butter
1 c. sugar
1 c. packed b. sugar
3 eggs
1 t. vanilla extract
3 c. flour
2 t. b. soda
1/4 t. salt
Filling:
1/2 c. creamy peanut butter
3 c. powdered sugar
1 t. vanilla extract
5-6 tablespoons milk

Directions:
1.)  In a large mixing bowl, cream the shortening, peanut butter, and sugars.  Add eggs. one at a time, beating well after each addition.  Add vanilla.  Combine the flour, baking soda and salt; add to creamed mixture and mix well.  
2.)  Shape into 1-in. balls and place 2 in. apart on ungreased baking sheets.  Flatten to 3/8-in. thickness with fork.  Bake at 375 for 7-8min or until golden.  Remove to wire racks to cool. 
3.)  For filling, in  a large bowl beat the peanut butter, powdered sugar, vanilla and enough milk to achieve spreading consistency.(I ended up using more milk than it suggested)  Spread on half of the cookies and top each with another cookie. 







Baker's Corner
This is a unique twist on a traditional peanut butter cookie.  The filling keeps the cookies nice and moist if you have soft cookies. It also adds a bit of soft texture if your cookies are more on the crunchy side(if you well-bake your cookies =P ).

I would suggest spreading the frosting more on the thin side--otherwise it makes the sandwich overpoweringly sweet(my opinion).
